Cake Pops

Cake Pops

So, Saturday I attempted to make cake pops. I knew it was going to be a challenge but I thought I could do it. Well, I was wrong. I made one mistake, I did not let the cake cool long enough so my cake pops kept crumbling. Keep this in mind when you try out this recipe. Besides that problem, it was an overall simple process! Even though they did not turn out looking good, they still tasted yummy! Happy Cooking!

Ingredients:
18.25-oz  box cake mix
9-by-13-in cake pan
Two baking sheets
Wax paper
Large mixing bowl
16-oz container ready-made frosting
Large metal spoon
Plastic wrap
48 oz candy coating
Deep, microwave-safe plastic bowl
48 lollipop sticks
Styrofoam block

 Directions:

  • Bake the cake as directed on the box and let it cool completely.
  • Crumble the cooled cake into the large bowl. You should not see any big pieces of cake.
  • Add three-quarters of the container of frosting to the bowl. Mix it into the crumbled cake, using the back of the large metal spoon. Don't use the whole container of frosting because the cake pops will be too moist.
  • The mixture should be moist enough to roll into 1 1/2-in (4-cm) balls and still hold a round shape. After rolling the cake balls by hand, place them on the baking sheets and let them rest for about 20 minutes before chilling.
  • Let the cake balls chill in the freezer for about 15 minutes. Don't let them get frozen.
  • Place the candy coating in the deep microwave-safe bowl and melt for 30 seconds at a time.
  • Now you’re ready to dip. Take a few cake balls out of the freezer to work with and let the rest stay chilled in the refrigerator.
  • One at a time, dip about 1/2 in (12 mm) of the tip of a lollipop stick into the melted candy coating, and then insert the lollipop stick straight into a cake ball, pushing it no more than halfway through.
  • Holding the lollipop stick with cake ball on it, dip the whole cake ball into the melted candy coating until it is covered.
  • When you remove the cake pop from the candy coating, some excess coating may start to drip. Hold the cake pop in one hand and use the other to gently tap the first wrist.  The coating will slowly slide down the surface of the cake ball until it reaches the lollipop stick.
  • Stick each one in the styrofoam block as you go and enjoy!

  • Fail.

    Brownie Cookies

These brownie cookies were a big hit with my family. I saw them on Pinterest and knew I had to make them. They were very simple to make. I hope you enjoy them as much as I did! I will definitely be making them again.

Ingredients:                                                         1 box of brownie mix

    •  4 oz of cream cheese
    • 1 egg
    • 1/4 cup of butter
    • 1/3 cup flour (The original recipe called for less, but it turned out better with this amount.)
    •  Parchment Paper
    •   1 cup Chocolate Chips

    Directions:
                          1. Mix all of the ingredients together in a mixer till it becomes soft. ( It's ok if it turns out "gooey", that's how it turned out for me.)
                           2. Cover a cookie sheet with parchment paper.
                           3. Drop the mixture onto the sheet by the teaspoonful.
                           4. Preheat oven to 350.
                           5. Bake cookies at 350 for 12 minutes.

     Enjoy!
